Chef Manuel (Manu) Alfau brought his experience cooking at Bilbao, Spain's renowned Guggenheim Museum to Seattle and cut his teeth at many of the area's top fine dining establishments like Union, Tavolata, Anchovies and Olives, Hitchcock Restaurant, La Bete, and Blind Pig Bistro. Despite working primarily in fine dining, Alfau was drawn to the potential of fast-casual food and sought to open businesses to improve the city's standards of fast food and creating community-centric chef owned businesses. Alfau opened Manu's Tacos in 2016, featuring Seattle's most popular guisado tacos, where proteins are braised low and slow and served as street tacos with its sauce and juices. In January 2018, Alfau launched the food program for newly opened Oro Kitchen at Gold Bar, fresh Latin flavors to Seattle's SLU neighborhood.
