Don Pancho had a vision to create a fast casual Mexican restaurant that would provide true Mexican flavor. This is how the Palenque chain was born. Originally from Sinaloa, Mexico and now a U.S. citizen, Don Pancho originally founded El Pollo Loco(C) which was a success that led him to open his first Taco Palenque(R) back in 1987 in Laredo, Texas.
