Pachuco's in Midland, TX began as a food truck venture by husband and wife duo Ruben and Idalia, offering a fusion menu of unique burgers, Korean-inspired dishes, bao, poutine, and more. After quickly outgrowing their original truck, they expanded into the oldest restaurant in Midland, Johnny's Barbecue, in December 2022.
With a passion for introducing diverse flavors from around the world, Pachuco's now operates as a brick-and-mortar establishment, continuing to serve their signature food truck menu alongside their new barbecue offerings.

Neat fusion of BBQ and various international flavors. Nice place to come for lunch. Definately worth a visit for locals and out of town visitors.

Small privately owned business that service up some really good BBQ options. You will not be disappointed, but know that if you stop in for lunch the dining area is a little small and fills up fast.

Nice little Barbecue joint in Downtown Midland. Had the Brisket poutine and potato salad. Best potato salad I've had away from home. Also have a good selection of dessert items.

The brisket, in-house made sausage, pork pozole were all delicious. With great customer service and the exact environment for BBQ, I hope to come through again one day.
