History

We're located in the heart of downtown Austin, just down the street from the Texas State Capital. Hudson Meats produces a variety of smoked sausages and meat snacks for food service and retail customers. We also offer processing services to the Texas wild game hunters. Just as the early pioneers succeeded in the Texas Hill Country by remaining flexible and adaptable, Hudson Sausage Company has managed to bring traditional recipes and products into the modern age of meat production. They say everything's bigger in Texas. Well, at Hudson Meat Market, our love and passion for processing and curing meats were already quite sizable when we first opened our doors here in Austin back in 1969. And to this day, those passions continue to grow. At our USDA-inspected facility, our fresh, flavor-packed smoked meats, sausages, and jerky start with meat that's locally sourced right here in Texas. For our local hunters, we also offer deer and game processing -- staying true to the art of traditional German butchering.
