Growing up near the lower Laguna Madre, we wanted to bring some South Texas flavor to Waco. Ceviche Del Mar represents both the Mexican influence of the Rio Grande Valley with the subtropical tastes of South Padre Island.

Got the aquachile to go and my order came out in around 10 minutes. Super fresh and light and customizable if you don't like cilantro like me. Served with jesse's tortilla chips was a nice crunch...

OMG amazing! I had the bowl at union hall with mango and fish. So flavorful and healthy. Hubs was actually jealous - lol. I recommend the advocado dip. YUM!

This is restaurant quality in a food truck! The presentation and taste was fantastic. I had the guacamole a la mexicana and the Pacifico ceviche. Superb!!
