Leaving her promising and lucrative 16 year career behind in the insurance industry would have been psychologically challenging for a start-up business. But Connie was so determined to share her love for baking with the rest of the world that she devised a plan and asked her Mother-in-law Shirley to share in the business venture and schedule. So with the full support and assistance from Shirley they formulated a plan and Connie and Shirley purchased a storefront in one of the most beautiful areas of Bethlehem. Connie, her husband Brian, and Shirley chose the Historic area, home to the famous Hotel Bethlehem. With many restaurants, pubs, cafes and boutiques in the quarter it was an easy decision to open Connie's Cakes and Cookies in Historic Bethlehem. This area was perfect since it was bustling with creativity and elegance. Connie takes great pride in her creations and this community of artists whether it be candy makers, restaurateurs, antiques, specialty shops, coffee and now creative baking was exactly the area she wanted to be. Connie and Shirley treat every cake from birthdays to your special wedding day as the most important cake of the day. You will only have one 1st Birthday and one 25th anniversary so every special occasion of yours is treated like their own. Every cake is personally created by Connie and Shirley.
