Went to the food truck in Bend--quick service and oh my god that brisket!!! It was so tender, moist (hate that word but when it works, it works) and peppery. Some of the best damn brisket....

Now open in Bend! Brisket is true TX style Brisket. Slaw is not traditional, but good. We thought the potato salad was a little bland. Overall thumbs up

I don't know what happened to this place over the last year or so. We used to make a special trip out from Bend just to eat at Pop's, but recently the meat has been oversalted, rubbery, and dry....
