Schag A Val sits on Route 40 just south of the Schaghticoke fairgrounds. It's open from early in the morning till the evening, so there's a good chance it'll be open if you're in the area...

A classic small town diner. We were driving through and stopped at this place and thought it was a gem. The portion sizes were generous and the food was tasty. My three kids enjoyed the meal.
