Empire Cheese is one of the plants owned and operated by Great Lakes Cheese. It is primarily a mozzarella and provolone cheesemaking facility. The plant, located in Cuba, N.Y., manufactures, packages and ships a variety of provolone and mozzarella cheese. It also packages the entire line of company s food service shreds. Apart from managing Empire Cheese, Great Lakes Cheese also operates packaging and cheese plants known as Great Lakes Cheese of Plymouth, Great Lakes Cheese of New York and Great Lakes Cheese of LaCrosse. The company serves various retailers and food service operations throughout the United States. It offers a wide range of dairy and deli products, including natural and processed cheese, provolones, mozzarellas and cheddars.
