diRiso Risotto Balls, a division of Lasagna Preziosa Ltd, started in 2017 as an outdoor food stand at the Hastings on Hudson Farmers Market. My father, Riccardo Befi, started the business as a passion-project to explore his curiosity for cooking Italian food. The residents in our little town of Hastings on Hudson gravitated toward the delicious fresh mozzarella, focaccia bread, lasagna and risotto balls that he was offering at the market. Sometime during my sophomore year of college (2015) I began coming home on the weekends to work at the farmers market and earn extra money. With time, it became clear that the Risotto Balls were our most popular product. I suggested that we change the name of the business and focus on a concept surrounding the Risotto Balls. Nearing my graduation from school, I started applying for more farmers markets, festivals and events in the area. We have since expanded into 5 markets across Westchester and NYC as well as several major food and music festivals.
We strive to create products that stand-out, both in flavor and visual appeal. Our recipes and production processes have been systemized and perfected to ensure consistently high standards.
