The Chile Pepper Institute, located in Las Cruces, NM, is the only international non-profit organization dedicated to the research and education of Capsicum, or chile peppers. Established in 1992, it builds on the legacy of horticulturist Fabian Garcia, who pioneered the standardization of chile pepper varieties in 1888.
Visitors to the institute can explore over one hundred different varieties of chile pepper seeds, along with various books, art, jewelry, hot sauces, and merchandise. All purchases support the institute's mission and provide real-world experience for student employees engaged in its operations.

Worth a visit . Bit hard to find authentic signage is poor- located on NM State University campus on second floor in the building. Seeds, gifts, sauces, and other pepper stuff!!
