Since 1988 , Chef Cajun Mike has been providing Chef and Catering Services. Chef Mike is a direct descendant of the original Cajuns that landed on the banks of St.Martinville, Louisiana in 1755 from the Canadian provinces of Nova Scotia and NewBrunswick. They brought with them values of faith, family, and community, and created aunique culture of food, music, and dance. At a very early age, Chef Mike learned anddeveloped Cajun and Creole cuisine from his grandmothers and his GREAT grandmothers,women who by their very vitality and longevity allowed him to touch his past, savor thepresent, and carry his ancestry into the future hopefully for generations to come. He hasnamed several of his dishes to honor their legacy.With a Culinary Degree from The La Cordon Blue Institute of Culinary Arts, Chef Mike hasbeen in the hospitality industry for more than 30+ years, and has become one of the mosthighly consumer-rated Cajun chefs nationally and in the state of Louisiana. He has heldpositions as Executive Chef and Chef de Cuisine for several noteworthy restaurantsthroughout the Southern United States. In the mid-80s, Chef Mike opened his first restaurant /catering business called Cajun Mikes Kitchen and Catering. Past credits include the headChef for the Saenger, Orpheum Theaters and the New Orleans Convention Center along withall the prestige past events held. Chef Cajun Mike immediately became famous for hisoriginal dishes - Shrimp Mighty Mike, Shrimp Pasta Josephine and The Creole Burger".The motivating force behind Cajun Mikes Kitchen and Catering was simple - to bringauthentic Cajun cuisine east of the Mississippi River. Over the course of almost threecenturies, Cajun cuisine and Creole cuisine influenced each other, borrowed from each other,and ultimately merged in a style of cooking called "melange".
