History

Bayou Bistreaux is a small mobile kitchen that we built piece by piece by hand. Over eight months we built an empty cargo trailer into a complete mobile kitchen capable of handling large parties, events and catering. A lot of blood, sweat and tears went into the build but it was well worth it to be able to offer our customers great food!

Oh man the food was so good. I got the loaded blackened chicken with cheese grits with parmesan sauce. Everything was cooked to perfection. The grits were perfect. The chicken seasoned very well...
