Pancheros Mexican Grill

In 1992, Rodney Anderson and his father founded the Panchero's Mexican Grill concept and opened two units, one near the University of Iowa campus in Iowa City, Iowa, and one near the Michigan State University campus in East Lansing, Mich. During the next several years, Panchero's built a loyal following with college students who were drawn to Panchero's oversized burritos filled with fresh ingredients. In 1998, Panchero's began to serve homemade tortillas that are pressed out with every order.
