The Roost Carolina Kitchen
History
The Roost opened in 2012 as Chicago's very first fried chicken food truck. To say we had humble beginnings is an understatement. We hit the road with one employee, renting kitchen time from a bar on DePaul University's campus and a three item menu: Herb Seasoned Fried Chicken (now the Original), Buttermilk Biscuits and Cucumber Coleslaw. We opened our first brick and mortar restaurant at 1467 W Irving Park Rd. in March of 2014. The Roost has grown into a nice sized little company of 25 staff with big aspirations for further growth.
Specialties
All of our chicken is bathed in a buttermilk brine for 24 hours before it's battered and fried fresh to order. We make small batches of scratch made buttermilk biscuits all day long. Put those together and you have the best damn fried chicken biscuit sandwich you'll find on any side of the Mississippi you may find yourself.
