Chanson (meaning "song" in french) is a fine dining restaurant in the Royal Blues Hotel specializing in artistic, worldly dishes made of the freshest, sustainable seafood and organic, local produce. As a member of Relais & Chateaux, our culinary team's goal is to provide outstanding gastronomy that reflects the best of the local area. The menu is ever-evolving, subtly shifting with the seasons to provide new, original experiences. The menu is decadent and playful, while the plates are presented with stunning artistic creativity and precision. The restaurant's interior design is striking. Tables are nestled next to expansive windows with a panaromic view of the ocean. A 1,500-gallon saltwater aquarium customized for the space cascades above diners in the ceiling. Combined with sophisticated, modern design, the Chanson dining room is an ethereal, chic and intimate space.
