Santa Elenas is the food truck concept of Chef Rodrigo Quijano. Rodrigo hails from the capital of Mexico City, but has spent much of his culinary career working in Denver, Boulder, and Fort Collins. Santa Elenas tries to focus on the Mexican food through the lense of the southwest. We incorporate wood smoking techniques, as well as sourcing some of the game that can be found in and around Colorado, including Duck, Elk, Trout, or Mushrooms from local growers like Hazel Dell.
