History
The first Crespelle location opened in February 2015 in Vail, Colorado as a pop-up restaurant for the 2015 FIS Alpine World Championships in what was the Ore House, next to the Gorsuch retail store on historic Bridge Street. Not intended to be a permanent business, but given the material success of the restaurant, the founders made the decision to open a permanent store in Vail next to Gondola One and the Surefoot boot fitting store.
Specialties
The idea for Crespelle (pronounced cres-pell) is to create Chef inspired, gluten free crepes using conscious ingredient, and streamline the crepe industry to the forefront of nationally accepted, healthy quick food. The company offers a simple menu of great food, prepared fresh each day using many of the same cooking techniques as a gourmet restaurant.
