A more formal Victorian dining room, Caroline's, focuses on fresh Colorado foods such as lamb, beef, game and seasonal,fresh, local produce prepared in the classic French tradition. Spring/Summer Hours Sunday-Thursday, 5pm-9pm, Friday-Saturday, 5pm-10pm. Fall/Winter Hours Thursday-Sunday, 5pm-9pm. Reservations required.

Caroline's is supposed to be the upscale restaurant at the Wine Country Inn, bur they mostly miss on that expectation. Food - I ordered the NY Strip - which was excellently cooked and seasoned....

Ok so you don't need to stay at the resort to eat here. This is a common misunderstanding. What an amazing experience. Rarely do I rate as 5 stars but this one earned the coveted 5 star rating....

Flavors and textures were all off. Risotto was gummy and overcooked. Broccoli was so drenched in lemon it was unpalatable. The peach bread pudding was actually good but they covered it in so many...

The French onion soup was good but don't get the beef burger unless you like shoe leather. Presentation looked good but it was so dry and tasteless. Service and ambiance were fine.
