Betula Aspen is the latest collaboration between chef Laurent Cantineaux and architect and restaurateur Juan Carlos Pérez Febres, co-owners of Bonito, a restaurant in the French West Indies Island of St. Barth. Betula offers Laurent's innovative French Pan-American cuisine, which combines French techniques with his experience cooking in the Americas for more than twenty years.
