My name is Toure Brady and I am a San Diego native with a strong passion for hospitality and culinary commitment. After attending The Art Institute of San Diego for Culinary Management, I spent 10 years of my career running and operating fine dinning restaurants learning and developing my love for great food, fun people and warm experiences. Through my journey I garnered a respect for the art of pastries, which lead me to fire up my oven and break all the cookie norms. And so I arrived at The Palette: A Sophisticated Cookie Company, where our #1 goal is to always excite the palette of our clients, while challenging everything nostalgic about a cookie. During my travels through ingredients, weights, and ratios I have found that my culinary training in the savory world has primed me perfectly to change how cookies are created. Carefully merging savory and sweet while thinking outside of the cookie jar has brought about The Collection, a series of cookies that challenge your palette.
