Le had opened Saigon Sandwiches in 1997 after her father passed away with a partner in the West Side Plaza. Due to issues in the partnership, in 2003 Le moved a couple doors down and renamed her shop Le Saigon Sandwich. The shop itself was very small. It did not fit as Saigon continued to grow in customer base. She decided to take a break in the summer of 2014 to focus on building her new shop at 1645 W Orangeburg which opened on October 15th 2015.
