Hilmar Cheese Company, located in California s Central Valley, is a producer of cheese and whey products. It was founded in 1984 and began its production of products in 1985. Hilmar Cheese specializes in the mass production of cheddar and American cheese utilized by private label and national brand companies. Hilmar Ingredients, a division of Hilmar Cheese Company, manufactures a wide range of whey protein concentrates, whey protein hydrolysates and three grades of edible lactose: natural, fine grind and extra-fine grind. Its Pharmaceutical Lactose division is a global marketer and will be specializing in Crystalline grades with spray dried and anhydrous grades planned for the future. It processes more than 11 million pounds of milk each day received from more than 270 dairies and 120,000 cows and more than 1 million pounds of cheese each day. The company makes Cheddar, Monterey Jack, Pepper Jack, Colby, Colby Jack, flavored Jacks, Mozzarella and Hispanic cheeses for use in food service, ingredients, retail and the restaurant/fast food trade. Its production of whey protein and lactose powder reaches more than 350,000 pounds per day.

Los Gatos Tomato Products is a grower-owned tomato paste processing facility located in the most productive tomato-growing region in the world. It has one of the largest, cost-efficient plants located in the middle of its productive tomato fields. Los Gatos is a partnership of four family farming operations. It owns the vast majority of the land that is used for farming, which gives Los Gatos direct control over the crop from planting through processing. Los Gatos is not a cooperative, nor is it a multi-product plant. It produces tomato paste and tomato paste only so that it is not a competitor to customers. Headquartered in Huron, Calif., Los Gatos employs almost 30 people.
