Cowboy Cantina is committed to bringing its guests innovative Southwestern Cuisine, food based in the rustic cooking and recipes of dishes that were eaten by colonial Spanish settlers, American Cowboys, Native Americans, and even the people of Mexico to the south. Known for its diversity and spices, specifically chile, whether red or green. Cowboy brings a fusion of these chiles (specifically from Hatch) and combines them with traditional “Americana” dishes and we believe our guests will find them as delicious as we do. The food is quite possibly the most bland thing you've ever tasted. The Spanish rice comes with a nice hint of Clorox and the drinks have the taste of water, sugar, and a sprinkle of grossness....
