Roger and Sally McConnell were shocked when they moved from Iowa to Mesa, Ariz., at the lack of quality, corn-fed beef in the region. The couple decided to fill the void themselves in 1990 by opening Midwest Meats, a butcher shop that offers Iowa-only, select-grade beef. The company operates two shops, one in Mesa and one in Fountain Hills, Ariz., that boast more than 100 specialty meats, including pork, poultry, lamb, beef and veal in a variety of different cuts. The couple has since opened spin-off businesses Midwestern Bakery and Midwestern Steakhouse. The three businesses all operate as divisions of Midwest Marketplace.

4th of July ribs hit the spot. We went with their own baby back ribs. Much meatier than the skinny kind, but they do dry out faster if you're cooking on a slow and low heat grill. Definitely...
