The Italian Peasant began as an over the counter pizzeria. Six weeks later, it was a full blown restaurant with takeout available. The desire was to bring New York Style Pizza to Tubac. They have also introduced the Long Island Lobster Roll to Arizona. They have recently expanded with a separate room for private parties.
