Situated at the foot of the oldest and biggest Water tower in the Netherlands lies our charming restaurant. An oasis in a crowded metropolis. We differ by embracing the big flavors that an ever shrinking world is offering and implement it in what we call, "the new Dutch Cuisine". We offer healthy meat from animals living a normal, stress free life. Fish directly from the harbor of Scheveningen and beautiful vegan dishes of our own invention. Also we ferment our own chilisauce and kimchi. We are always evolving and experimenting with new ways to create original flavors and dishes pleasing to the eye. Like now we are in the proces of creating homemade tempeh of brown beans or tofu out of pumpkinseeds. And with a menu that will change with the seasons, you will never be disappointed or bored. In de keuken van Floris is a unique restaurant for those who are open for surprises and have no eating limitations. Enjoy refined and exiting dishes combined with bold wines from around the globe in a dynamic atmosphere. There is no food or wine menu, since Patron cuisinier Floris Versluijs and his sommelier have constructed a nine course menu with a pairing of wines or non-alcoholic juices. At arrival at a set time, we serve an aperitif and a pre-appetiser. Every 25 minutes a new course is presented and personally explained at your table. All dishes are prepared right in front of the guests, in our fully open kitchen in the middle of the restaurant. It is also possible to have nine courses without meat or fish or completely vegetarian. Please mention your dietry wishes are in advance. In de keuken Floris is perfectly suitable for your private lunches or dinners. Tell us your wishes and we will make you a fitting proposal. The focus lies on tasting and flavour. The experience intensifies as more and more senses come in to play. Structure is of great importance in the dishes, feeling with the mouth takes tasting to the next level. Tables are well lighted, so all the details are visible. The restaurant has a warm and natural look, the kitchen is industrial and mechanical. My style of cooking went through a real (r)evolution, it is refined and contains lots of signature.
