Colibri’s first breath happens in London, 2014 at a restaurant where Alex, a Brazilian guy that use to work in the kitchen met Carlotta an Italian girl that use to work at the bar. Between cocktails and pastas cooked at 4 AM they fell in love, and shared moments, histories and recipes. He took she to South America, She brought him to Italy. They married and they became three, then they decided to move to Amsterdam for the dream became true. Our idea was create a place where we could be together as a family doing what we love to do: not just food and drinks, but also music, art and histories.
