Grow Restaurant, a journey through experimental and dynamic cuisine, growth vehicle. In tune with the seasons, the availability of products according to the cycle of Mother Nature. In full respect of the environment that surrounds us, today we take the products that wild nature offers us to be able to serve them tomorrow through preserves and fermentations. We try to transform any commonly discarded part into Kombucha, Garum, juices or sauces. In full respect of the animal, we apply the "nose to tail" philosophy, using or serving each of its components. The selection of ingredients takes place daily with meticulous care, through dialogue with local producers, such as farmers, hunters and fishermen of lakes and rivers. We prefer micro realities that like us respect the environment, love nature, hand down traditions and work in a sustainable way. We seek the ancestral flavors of our region, offering a non-raditional proposal, but from our point of view.
