If you’re a person who usually never eats the crust of your pizza and always leaves it on a side, would you believe us if we told you that that’s about to change? Very often people leave the crust behind because it makes them feel full very quickly and this way you can eat more of the pizza part with ingredients on it. The way we make it goes like this: the crust must not be too dense or heavy and must be full of air. The secret to a puffy edge lies in the hydration, which must be around 70%. The dough for our pizza may be proofed for up to 48 hours in order to develop an airy structure with a unique aroma. Imagine that fluffy crust that you’ll never leave behind on your plate: we promise!
