Head Chef Tashko's approach is towards authenticity, seasonality and freshness. At Dorindos we source a lot of our products from local producers, but we also bring some new and unheard of ingredients from Mexico to Oxfordshire. His inspiration is to bring a fresh modern twist to traditional Mexican cuisine to emphasis the colour, aroma and flavour of every dish. Mexican cuisine is a melting pot of different cultures which come together to form a unique blend of flavours and techniques. With the arrival of European, West Africans and Portuguese immigrants centuries ago, their ingredients and customs intertwined over the decades with those of the locals, creating what is known as Mexican cuisine: one of the fastest growing gastronomic movements today.
