The vibrant heart of hotel Maison Delano Paris, Dani Garcia’s new restaurant covers the ground floor of the superb 18th century building that serves as the hotel’s home. The en-suite salons, the open kitchens, the central bar and the two wine cellars encircle the historic courtyard which extends the restaurant like a comfortable dining room, covered in winter and open to the Parisian sky in summer. La Chambre Bleue experience by Dani Garcia begins with a series of starters that give pride of place to oysters, but also to Iberian acorn-fed ham, anchovies & sardines, fried squid, or lobster salpicón. Then come dishes honouring the Spanish register such as paellas, octopus, txuleta, and chicken, as well as other Mediterranean references, such as baked sea bass.
