Berastegi is surrounded by mountains, one of them, Mount Xoxote, belonging to the Izarraitz massif, on whose slopes and wide pastures we raise our Latxas sheep. In order to maintain the genuine elaboration of the Xoxote cheese, the centenarian artisan customs and the past practices of the shepherds of the area are taken care of with special care and delicacy. For this reason, in the Berastegi farmhouse they have continued with the ancestral traditions of grazing, determined by the weather stations. The cheese of our house is a natural, excellent product, rooted in our town and its culture since time immemorial, with peculiar characteristics that endow it with a strong personality worthy of part of the best quality cheeses.
