You stand in front of the cupping cup and can hardly wait to see what else the crust hides in front of you. Underneath this crust lie the aromas and with them all the influences of the past year that have had an impact on this coffee. If you are aware of this, and that the act of roasting itself has contributed to the release of these properties, then you can perhaps understand why we can't wait to finally release these flavors. For us , PHOENIX COFFEE ROASTERS has always been more than just a coffee roasting company. What exactly it is is constantly being redefined and what unites us is our love for excellent coffees. We look for these coffees - and it's not easy to find them - we want to roast them in the best possible way and extract them to the point. Maybe we do this because no other drink can be as complex and multi-layered, but maybe also because every harvest is roasted at some point and all we have left is the memory. And who wants to stay in a bad one?
