D'ovale, l'enseigne fixée à la rue du lac 45 devient ronde. A l'intérieur, tout a changé. LE CARRE fédère les quatre espaces de cet établissement traversant: Côté rue, le café et sa terrasse. A l'étage, la brasserie et sa véranda avec vue panoramique sur le lac. Côté lac, sur le quai Perdonnet, le bar nocturne et en face, la terrasse à ciel ouvert. Amateur de bons mots - nous sommes belges sur les bords - nous avons cependant souhaité jouer un peu. Jouer avec les mots. Ainsi, l'ancien Scotch bar s'appelle désormais LE BARDU carré. Et l'ex Petit théâtre devient LE BORDU carré. LE CARRE adresse également un clin d'œil au Carré liégeois, quartier festif de Liège, ville du sud-est de la Belgique, connue pour sa convivialité. * 3UNE CUISINE DE SAISON ET FAIT MAISON Vous ne trouverez pas d'ananas au CARRE. Ni d'avocats. Par contre nous servons volontiers des moules provenant de Zeelande et des crevettes grises d'Ostende. Il est bien clair qu'en souhaitant cuisiner, dans cet établissement, quelques plats typiques belges, il faut aller chercher certaines matières premières à quelques lointains kilomètres de Vevey. Mais rassurez-vous, tous nos produits proviennent d'Europe et la majorité de Suisse, voire de Suisse romande. Breadstore nous fournit le pain, avec tout le savoir-faire d'un MOF. La viande des burgers vient de chez Ruchet, le fameux boucher gourmet de Vevey. Les poissons sont pêchés exclusivement dans le lac Leman. Les produits laitiers et fruits et légumes sont tous suisses.
